Herb Roast Chicken with Mushroom Tomato Sauce

Herb Roast Chicken with Mushroom Tomato Sauce is a western main course made of whole chicken, marinated in olive oil and pepper and roasted.
It is served with Mushroom Tomato Sauce which has a delicious flavor of mushroom, tomatoes, chicken and Rose wine.

Ingredients:
  • Chicken (1 whole chicken with skin)
  • Pepper (crushed, 1 tbsp)
  • Olive oil (2 tbsp)
  • Button Mushrooms(200 gms)
  • Tomatoes (4, cut into halves)
  • Carrot (1 small size, chopped)
  • Onion (1 small size, chopped)
  • Garlic (6, crushed)
  • Indian Rose Wine (150 ml)
  • Water (300 ml)
  • Salt(1 tsp)
Method:
To make Herb Roast Chicken
  1. In a bowl, add the olive oil, crushed pepper, salt and mix well. Marination for the chicken is ready.
  2. Marinate the chicken with this marinade and rub it well.
  3. In a bake pan, add the carrot, garlic, onion and mix well in the marinade. Place the chicken on top of these vegetables.
  4. Place the button mushrooms around the chicken and spread.
  5. Place the tomatoes on top of the mushrooms.
  6. Adjust the seasoning with salt and pepper on the mushroom and tomatoes.
  7. Pre-heat the oven at 200 degree Celsius for 5 minutes.
  8. Place the chicken in the oven and roast it at 180 degree Celsius for 1 hour 5 minutes.
  9. Herb roast chicken is now ready. Separate the chicken from mushroom and vegetables.
To make Mushroom Tomato Sauce
  1. Peal the skin of the roasted tomatoes & cut the bones from the roasted chicken.
  2. Heat 1 tbsp of butter in a pan, add the chicken bones and fry till they turn brown in color.
  3. Add Indian Rose Wine into the pieces and reduce the wine.
  4. Add water/chicken stock and reduce in slow flame.
  5. Add roasted mushroom and tomatoes into it and cook for 5 minutes. Sauce is now ready.
  6. Strain the sauce in a strainer to remove the bones and other residue.
  7. After straining, we get a sauce that is ready to be served with the chicken.
Serve roasted chicken piece in a plate, garnish it with roasted mushroom and tomatoes, and serve it with Mushroom Tomato Sauce.
