Chettinad Chicken

Chicken Chettinad is a popular recipe of South India, Tamil Nadu of Chettinadu region. The Chicken is cooked in variety of Indian spies roasted and ground.Its delicious aroma spreaded across my kitchen. One must experience this wonderful recipe.

Ingredients:

For Chettinad masala

  • Marathi mughru (5gms)
  • Mace (5gms)
  • Kalpasi (5gms)
  • Star anise (5gms)
  • Bay leaves (5gms)
  • Cloves (5gms)
  • Cinnamon stick (5gms)
  • Black pepper (10gms)
  • Black cardamom (5gms)
  • Green cardamom (5gms)
  • Coriander seed (20gms)
  • Fennel(saunf)(10gms)
  • Cumin (20gms)
  • Curry leaves (dry) (20 gms)
  • Red chilly(round) (25gms)
  • Desiccated coconut (10gms)
  • Nutmeg (1)

For Chicken

  • Chicken (300 gms)
  • Onion (2 cups, chopped)
  • Tomato(4 medium size)
  • Green chilly(2)
  • Curry leaves(1 twig)
  • Red chilly powder(1 tsp)
  • Coriander powder(3 tsp)
  • Oil(1 tbsp)
  • Fennel seed (1 tsp)
  • Ginger garlic paste( 1 tsp)
  • Salt as per taste

Method:

  1. Roast all the ingredients under the chettinad masala and cool it at room temperature.
  2. Grind them in a grinder to make fine powder. Chettinad masala is ready. Keep it aside.
  3. Heat oil, add fennel seed, when it splutter add chopped onion and chopped green chilly, sauté it till gets light golden colour.
  4. Add chilly powder and coriander powder and saute again.
  5. Add add chopped tomato sautéed it well till they are cooked.
  6. Add chicken and Chettinad masala (1 & 1/2 tbsp). Saute till all the spices mix well.
  7. Add 1 cup of water and cook till the chicken is cooked nice and tender, for about 10 minutes in a slow flame.
  8. Add salt as per your taste. Switch off the flame .  Chettinad Chicken is ready.

Garnish Chettinad chicken with coconut slice and curry leaves and serve with steamed rice.
