Carrot Cake

Carrot cake is a delicious cake recipe and uses lots of carrots in it. A carrot cake is a healthy bake dish that can be an breakfast dish.

Maida / All purpose flour (1 cup)
Baking powder (1/2 tsp)
Sugar (1/3 cup)
Vanilla essence (1/2 tsp)
Cooking Oil (1/2 cup)
Grated carrot (1 cup)

In a mixing bowl, add all purpose flour, baking powder and mix the dry ingredients well and keep it aside.
In another mixing bowl, add eggs, and whisk well.
Add sugar and whisk again.
Add vanilla essence, cooking oil and whisk till it becomes creamy and keep it aside.
Now add the grated carrot and mix gently.
Now grease a baking tray and pre-heat the oven at 180 degree Celcius for 10 minutes.
Now add the dry ingredients to the wet ingredient and fold in gently.
Pour this cake mix in the baking tray and bake it at 180 degree Celcius in a pre-heated oven for about 30 to 40 minutes.

Prick it with a skewer to check if the inside of the cake is baked. If the stick comes out clean, that means, the cake is baked well and nice.
Transfer it in a wire rack and allow it to cool.

Delicious carrot cake is now ready. Serve it with whipped cream.
